Preparing stuffed potatoes?

I was wondering what is the best way to bake the potatoes for twice baked or stuffed? I figured no foil in 350 oven?

When I have made them I do not use foil. You are right about the crispy skin.
 
Ditto. Something that I read in Harold McGee's The Curious Cook that helps crisp the skins is to give them a good coating of vegetable oil before baking.

Alton Brown demonstrated this - here is how he explainers it.
