Reheating pork chops

We had some leftover Cajun style bone-in chops that were perfectly cooked. To reheat, I trimmed the bones off and simmered them in a saute pan that had chicken broth, white wine, salt, pepper and red pepper flakes. The bones added a ton of flavor to the sauce/simmering liquid. I sliced the meat and set it aside. After 5-7 minutes, I removed the bones and set the heat to med-low. I set the sliced pork in the pan to reheat for maybe 3 minutes and they came out as tender as can be.
 
That sounds wonderful, Jeekins, and is making my mouth water!

Now can you tell me how to cook pork chops perfectly in the first place? It's always been a trouble area for me!

Sometimes, reheating pork chops turns out very dry. Your method looks great.
