I have gotten hard shriveled vegetables too. Always from a lack of liquid.

I have a Westinghouse 650 Gas Oven, and the thermostat does work.

I Have a Pyrex Casserole dish (approx 4 Litres) like this...

As I mentioned previously, the meat was cooked beautifully, and when I pulled the dish out of the oven, the liquid was happily boiling away.

Meat always bakes faster than vegetables.
Next time try preheating the oven.
Were the vegetables completely covered by the liquid?

Yes... Plenty of liquid for the Vegies.
I must also say that the combination of the jar of cooking sauce, and the cups of Stock & Water made it for a "thick-ish" liquid environment. There was still plenty of liquid for each serving when it was eventually dished up.

If you folks could post me some links to some of your Casserole recipes that always work for you that would be great.

There are tons of great casserole recipes posted by our members here in one of our subforums. I recently spent an hour or so looking through it and getting ideas.

That depends on the vegis and the thickness/size of the meat. I can't think of a single time that I have cooked meat and veg together and the meat was done but the vegis weren't.

I have had roasts cook faster than potatoes.
Rarely but once in a while. Oven and slow cooker.

Now to the OP: I think there are just days that food doesn't play right.

So very true! My misbehaving food generally shows up when I'm trying to bake something.
