What does this mean?

I have watched many cooking shows, and i often see scenes in the kitchen, the chef say's for example" scallops all day" what in the world does "all day" mean?

I would guess it means that they will serve them at any time of day, even for breakfast. Many places serve breakfast all day, so maybe they serve dinner all day.

Its a term used by the expediter or the line when counting orders/tickets.

"three scallops all day" means that a total of three scallop dishes have been ordered.
