What is Oven Frying?

Heard the term, I'm completely clueless, but quite curious... It doesn't make a lot of sense to deep fry in your kitchen if you're just one person and don't own a diesel-powered vehicle you can just pour used oil into.

Do you really get a deep-fried texture? How's it done? Any good recipes?

Obviously inside an oven you are either broiling or baking. "Oven frying" is an attempt to create the same texture (crispy) and flavor of say Oil fried chicken without the oil. This method is used by those who for one reason or another are trying to limit their intake of fats in thier diet. Or it is done simply because one likes the taste/flavor of the finished product of the chicken, fish what ever. Many different coating are used to create the crsipy outside texture. Crumbled corn flakes, and crumbled crackers are two. Specific recipes are numerous. You might try this very easy and simple one;

Crush crackers with a rolling pin.
Melt butter in microwave or on stove top.
Season chicken with McCormick Season All
Dip pieces in butter
Coat in crackers crumbs
Place the peicess in a shallow baking dish
Cook until pieces are done In a 350* oven.
If cooking for 1 person dark meat will take longer than white meat.

If I don't grill catfish or chicken, this is the way most normally fix it -

OVEN FRIED CATFISH OR CHICKEN

1 egg
1/2 cup parmesan cheese -- grated
3/4 cup whole wheat flour
1/2 cup cornflakes -- crushed
1 1/2 teaspoons paprika
1/2 teaspoon salt
1/4 tsp. pepper
2 Catfish fillets -- cut in half crosswise

Preheat oven to 375° F.
Have two shallow bowls at hand. In one mix one egg with 1 T. water and in the other mix together the parmesan cheese, flour, cornflake crumbs, paprika, salt and pepper.
Dip catfish pieces in an egg wash; coat with cheese mixture.

Place each filet on baking sheet that has been sprayed with cooking spray. Spray the top of fish also.

Bake for 15 minutes, turn each piece over and continue cooking for 10-15 minutes more. Try not to cook the fish past 140° F. Serves 4

For chicken, have at hand the two bowls with egg wash and parmesan mixture. Dip 4 1/2-breasts in the egg wash and then the dry coating.

Proceed with recipe and bake 20 minutes and turn pieces over and continue cooking for 15-20 minutes until no longer pink and temperature is 160° F. And for a wonderfully moist and tender chicken breast, brine the chicken pieces before using.
 
"Oven Fried" is a term used to describe an attempt to simulate real fried food by coating a food item with some type of fat, usually cooking oil or spray, and baking it in a fairly high temperature oven (425F - 450F) until crispy on the outside.
