Yellow Potatoes

Probably Yukon Gold potatoes. The flesh is a pale yellow. They are great for mashed or cut up in a stew.
 
For the most part, you can substitute red potatoes for the Yukon Golds. The flavor may be slightly different but good nevertheless.

IMO, the reds seem to require slightly more cooking time.

I love Yukon gold potatoes for mashed potatoes because they are nice and creamy after boiling. Red potatoes are better for baking in my opinion because they tend to be harder in texture.
