What Weber do you have and how old. I used to own a 3 burner Genesis before buying their Summit model. I had no problem controlling the heat and could easily keep the grill below 250 with one burner. I did a lot of indirect cooking at lower temps.
It's a 7-year-old Silver (the cheapest one available at the time). Two burners. I used to go by the thermometer in the hood then tested it with my probe thermometer at the grill surface. I can't maintain a reasonably constant temp in the 225-250F range with this grill.
