Dutch Oven Cheesy Bacon Potatoes
The bacon helps to keep the potatoes from sticking to the Dutch Oven and adds great flavor. Add as little or as much bacon as you prefer.

DUTCH OVEN CHEESY BACON POTATOES



8 medium POTATOES; About 8 Cups, Peeled And Sliced.
6 slice(s) BACON; Lean Or To Taste.
1 small ONION; Chopped.
SALT; To Taste.
BLACK PEPPER; To Taste.
CHEDDAR CHEESE; To Taste.

Line bottom of a 12" Dutch Oven with bacon.
Place Dutch Oven over coals and brown bacon slightly on one side.
Remove from heat and layer half of the potatoes over the bacon.
Sprinkle some chopped onions over potatoes and season with salt and pepper to taste.
Sprinkle cheese to taste over potatoes.
Finish with remaining potatoes, onions, salt and pepper to taste.
Place lid on Dutch Oven and bake at 375 degrees for about an hour or until potatoes are tender.
Just before serving sprinkle top of potatoes with more cheese and let melt.
