Grilled Sweet And Sour Bluefish

1 onion, minced
1 red pepper, minced
1/2 stick butter
1 cup water
1/4 cup white wine vinegar
1 Tbsp. dark brown sugar
1 Tbsp. Worcestershire sauce
2 tsp. black pepper
2 tsp. paprika
2 tsp. chili powder
1 tsp. minced garlic
1 tsp. salt
6 (8 oz.) bluefish fillets


In a saucepan, combine ingredients. Bring to boil and
simmer 15 minutes. Keep sauce warm. Grill fillets skin
side down over coals about 4 inches from heat, basting
with sauce for 6 to 8 minutes, or until they flake when
tested with a fork. Serve with remaining sauce. Serves 6.
