Southwest flavors - what makes them?

What spices, or ingredients do you think of when you think of southwest flavors ? I want to do some grilling and want to try something new.
 
I think of mesquite, chillies, tomato based sauces, masa, cinnamon, whole corn, prickly pear jelly (ummmm!), lean beef, spicy jack cheese.
 
I think of Bobby Flay, and how he SW'izes everything... :ROFLMAO:

Seriously, the bases have been pretty much covered by Arky and appletart.

On the grill, well, think red meat + lots of chilies.
