Black-eye Pea Cornbread

Ingredients

12 inch Dutch Oven


1 pound sausage
1 cup corn meal
1 teaspoon salt
½cup plain flour
½ teaspoon baking soda
½ cup corn oil
1 cup buttermilk
2 eggs, beaten
1 can cream-style corn
1 can black-eyed peas
1 onion, chopped
2 cups grated cheese
Pam cooking spray

Procedure

Brown sausage in Dutch oven. Remove and drain. Wipe out oven with paper towel. Combine all ingredients in a mixing bowl. Add sausage back into mixture. Mix well.
Spray Dutch oven with cooking spray. Pour mixture in oven.
Place 19 coals on top and 10 on bottom. This will be at 425 degrees. Cook for about one hour to one hour and 15 minutes. Or until golden brown.
