Ok.. so I have now pulled a block of gumbo out of the freezer for tonights dinner. Thanks for helping me sort that out.

All this talk is getting me into a Cajun state of mind. I haven't made a jambalaya with Creole sauce in a while. I think I'll have to put it on the menu soon.

Thanks PPT and Mudbug....

I forgot to mention to remove the thighs, and carefully remove the meat in large pieces..Stir gently into the Gumbo..Don't over stir or you will tear the chicken into shreds..Not Good!!!

Andy M...I was in the kitchen last night cooking something, and I looked up and saw a big jar of Old Bay... I think I may have thrown in a couple of pinches into the spice mix too
