Chicken and Rice 4 Kevin
Ingredients:
2 lbs. fajitia seasoned chicken meat (bite size)
2 packages Lipton Rice and Sauce mix (I like Cajun flavor)
3 10 oz cans ®Rotel Tomatoes (at least one of them should be EXTRA HOT!)
Procedure
Put everything in a well-seasoned 12" Dutch oven. Rice and tomatoes first, stir um up then the chicken.
Cook with 12 coals on the bottom around the outside edge and 18 on the top for an hour. Check for doneness.
NO CHICKEN SUSHI!
We cooked this on a Boy Scout camping trip and Kevin fell in love with it. He and I both like it with all 3 cans of ®Rotel Extra Hot. I like it with some 2 Jerry's Hot Sauce and warm corn tortillas.
