Pork Chop Casserole

4 pork chops (1 per person)
3 tbls oil (bacon dripings are nice)
1/2 bell peper chopped
1/2 cup onion chopped
1 or 2 ribs celery chopped
paprika
1/4 cup shortning or less
1 can cream of mushroom
1 soup can milk
1 cup uncooked rice
Salt, black pepper, cayenne to taste

Season chops and brown in oil. Saute vegetables. Mix soup and milk well.
Add rice, vegetables to soup/milk mixture. Pour into greased cast iron dutch oven. Lay browned chops on top...press down a little. Hang pot over fire for about an hour or until rice is done. Serve with Louisiana Hot Sauce/Tabasco.
