We do these for breakfast alot out camping. I normally use one slice of bacon for one side of the bread because we find it's a little easier to pick up and eat this way. I butter the top bread (The side without the bacon) only.
Enjoy! Debbie

Spray pie iron with Pam.
Cut bacon into strips and lay into bottom of pie iron.
Gently press down bread.
I like to make a little indent for the egg to sit in also.
Crack egg onto bread.
Season eggs with salt and pepper to taste.
Cover with the other slice of bread.
Butter bread and close lid.
Cook over medium heat until bacon is crisp and bread is toasted.
Turn over pie iron and continue cooking until bread is toasted.
Adding cheese to these are really good.
