Woody's Pina Colada Cobler


3 20oz cans pineapple (crushed)including juice(unsweetened in natural juice)
1 c. coconut flakes
2 c. unbleached white flour
2 c. sugar
4 tsp. baking powder
3 T. milk
1 12.5 oz can coconut milk
1/2 tsp. salt
2 cube butter
6 oz pineapple soda pop (found @ Safeways)
1 tsp coconut flavoring


Place pineapple including juice, coconut flakes, coconut flavoring and pineapple pop in 12 inch Dutch Oven; bring to a boil. Mix the remaining ingredients except butter in a seperate container.
Add mixed ingredients on top of fruit. Pour melted butter on top. Bake at 350 degrees for 60 minutes or until well browned on top.
