Alton Brown's Sugar Apple Pie
Has anyone tried this? I don't have a deep tart pan & I subbed black pepper for the grains of paradise since they seem to be hard to find. I can't get Apple Jack here either. Other than those things I stuck as close to the recipe as it says. Right now it's in the oven & I guess I'll have a review later.

I met AB years ago. I have even spoken to him on more than one occasion. He himself will tell you he is not a baker and more often than not his baking recipes do not work. When I went to his cooking demonstration at the Fabulous Food Show last year, he totally messed up when he was trying to make taffy. It was very disheartening. His patter was good and he kept on going but I think he did more to discourage people from trying to make taffy than encouraging.
Further, even one of his better baking recipes--The Chewy from Three Chips for Sister Sara is way too salty--inedible even. I could site other examples where folks have had problems. Or you can google and see for yourself.
