Grandma's Blackberry Upside Down Cobbler

This is so absolutely delicious and so easy to make!!!

MY GRANDMA'S UPSIDE-DOWN COBBLER

2 Tbsp butter - melt in 2½ qt deep casserole in microwave, spread around

Blend together the next 5 ingredients, and pour over the butter:
1 Cup sugar
1 Cup flour
2 tsp baking powder
Pinch salt
2/3 Cup milk

Combine next two, cook just enough to melt sugar:
About 3 Cups (or a bit more) fresh blackberries
1 cup sugar (or you can use less if it's too sweet)
(if using peaches or apricots, add lemon juice)

Pour fruit mixture evenly over batter in casserole.

Bake @ 350º for one hour. Crust will rise to top. Serve warm with dollop of vanilla ice cream.

It's tangy and sweet all at the same time.
I'm not sure how long it keeps though, as I've never managed to have it around more than 24 hours....!
 
Okay now I'm officially craving blackberries - thanks for posting this homey recipe! I'd love to dig into it right now with a big scope of French vanilla ice cream or clotted cream!

I remember my grandmother used to put some of the red ones (not quite ripe) in her blackberry cobbler to heighten the taste. She also used to make a blackberry dish in a saucepan on the stove and put dumplings in it. That was so good and she always put fresh cream or whipped cream on it. I can't remember just how she did it. I think I will ask my mother if she can recall.

Hey! Something went wrong ... the wonderful scent of the Cobbler is running through my house, but the crust did not rise to the top like the receipe says ... it stayed at the bottom ... wha happened?????????

Check the expiration date on your can of baking powder, pati. If it's expired or close to it, that may have been the cause of your cobbler not rising.

actually i just purchased a new baking powder because of something else i baked that did not rise ... maybe it's my oven ??? i find that i have to use 3x the amount called for and/or add baking soda to my recipes ... maybe it's the altitude ... whatever ... i do have a really great recipe for Berry Cobbler, which i will post later this week when i have more time :rolleyes:
