Hiya All!
I have Googled for days, and have not found a interesting T-N-T "Coconut Cream Pie" recipe...
Most of them are for Custard....I am looking for sinful, die happy, refrigerated, summer coconut cream pie.

Any help for this addiction will surely be appreciated!

COCONUT PIE

SEPARATE 6 EGGS
SET THE WHITES ASIDE TO MAKE MERINGUE

MIX TOGETHER:
6 EGG YOLKS
1 CUP SUGAR
1/2 CUP CORNSTARCH
1 CUP COCONUT
2 TABLESPOONS VANILLA

ADDING SLOWLY A LITTLE AT A TIME:
4 CUPS MILK

COOK UNTIL THICKENED
POUR INTO BAKED PIE SHELL

TOP WITH MERINGUE
OR A WHIPPED TOPPING


IF USING MERINGUE
SPRINKLE WITH 1/4 CUP COCONUT
PLACE IN OVEN TO BROWN
BAKE AT 350' FOR ABOUT 12 MINUTES

I've always heard that custard only uses eggs to bind...and that cream uses something like cornstarch. This is my recipe...with cornstarch...so hope it's what you're looking for!

I will be making one of these this weekend, along with pecan for DH.

How about any recipes using cream cheese, or real cream, with a whipped cream topping?:pig: :pig: :pig:

Should I try a pudding mix and just add these things I am craving into the mix?? (coconut, cream cheese, whipped topping?) would that work? or would that not set-up correctly?:mellow:
 
I haven't had a chance to log on here for ages....and here tonight is a thread about the very thing I've been craving! Tomorrow we are having a braai (bar-b-cue sort of), and I will make coconut cream pie tomorrow morning to serve for dessert. I haven't decided which recipe to use, but....Thank you!
