I would appreciate your favorite recipe for a one-crust and a double-crust pie when you have time please..thank you.

Hi Roxy, here you go

2/3 cup lard
2 cups flour
4-5 tbsps very cold water

Put lard and flour in bowl together. Use a pastry blender to cut up the lard into very small pieces. (Slightly smaller than pea sized). Add cold water one tbsp at a time and use your hands to make the dough stick together. Try not to handle the dough too much if possible. Separate into two equal sized pieces and roll flat. This makes a double crust pie.
