In trying to find the full recipe for chocolate cupcakes, I found some of my Mom's classic recipes and thought I would share them. This pie was a favourite for Sunday Night dinners.

Flapper Pie
1 1/4 cups graham crumbs
1/3 cup brown sugar
1/4 c melted butter or margarine
1/2 tsp cinnamon.

Mix together and set aside 1/4 cup of the mixture for the top. Line a pie plate and bake at 350 F for 5 minutes.

Filling:
2 cups milk
2 eggs, separated
1/4 cup sugar
1 tsp vanilla
1 tbsp butter or margarine
3 tbsp cornstarch

Scald Milk. Mix egg yolks and sugar, add some scalded milk and then add all to the milk, stirring. Mix cornstarch with a little water and add slowly to the filling, stirring until thickened and boiling. Remove from heat and add vanilla and margarine.

Pour filling into the shell. Beat egg whites stiff (add a little sugar to taste) and spread on the filling. Sprinkle with the remaining crumbs.

Bake at 350 F until the meringue is golden brown.

Chill when cool.

That sounds like what "Mainers" call graham cracker pie, except they top with whipped cream and some graham cracker crumbs.

I'm gonna bookmark this recipe and give it a try sometime.
