Make filling today?

I am making a mince meat pie to take to a friend's home on thanksgiving day. I would like to make the filling today and keep it in the refrigerator until i make the rust and bake it on Thursday. Think it will be okay?

What recipe are you using? Alton Brown's recipe says to let the filling sit for three days before using, so that would be perfect.

Mine is from Good Housekeeping. It has booze in it, so should be pretty good after melding with the other flavors. Think I'll go for it. Thanks.

If it has booze in it, it should be really ripe for a pie in three days. Go for it! Happy eating.

Life is short. Eat dessert first!
