There are a number of hits re: recipes for grapefruit meringue pie, some of which use strawberry jell-o (yuck!). Here's one that sounds interesting:

I will just switch out grapefruit for lemon in my recipe. I've already done so for the other citrus i have tried. So far Tangerine is killer!

Do you think using Ruby (pink) vs. white grapefruit will make a difference? I love freshly squeezed Ruby grapefruit juice.

I would think it would be delicious! And again, there's always grapefruit curd!

I would prefer the Ruby Red...it's a bit sweeter. If I have some I have to make sure someone is around to share, since I'm not supposed to be eating grapefruit...
