I saw Alton Brown make sweet potato pie a couple of days ago an he used yogurt to hold it together. I don't like yogurt. If I am going to make a pumpkin custard pie like Mrs Smith's. would I make a custard like I did with boiled custard, which I am quickly becoming proficient at, and then mix the pumpkin or sweet potato in or would I do something else?

Can you stomach sour cream? I do a peaches and cream pie using sour cream as a binder for the fruit. Works well. I think the custard would likely work very well too.

I make a sweet potato pie by baking the sweet potatoes and then mashing the pulp with a potato masher or sometimes I put the pulp through a ricer. Then I just follow my recipe for pumpkin pie substituting the potato for the pumpkin -- if the potatoes are very sweet, you may want to reduce the sugar a little. I make a pecan nut crust for my sweet potato pie -- it is always a popular dessert, especially at this time of the year!!! Let us know how yours turns out.
