Lemon Meringue

Pecan, Apple, Lemon Meringue, Blueberry and NY Style Cheesecake.

You are evil, MM. I enjoy great cake, but I love a great pie. My favorites to make are, and in no specific order;
1.Key Lime

2. Apple Caramel with a latticed top crust

3. Pear with double crust, brushed on top with milk, and coarse sugar sprinkled on top.

4.Cherry, with a sweet, and cinnamon kissed crust

5. Number one, when the filling comes out perfect - wild blueberry

6.Lemon Meringue

7. Strawberry, with whole, fresh berries in a flaky crust, covered with strawberry glaze, no top crust required. Can you say yum!

8. I know some of you saw cheesecake in the cake thread. To me, this extravagant and wonderful desert is a pie. It has a crust, and a custard filling, and I have a New York Cheesecake recipe that I love to mae, and is sought after by everyone who has tried it. Not my recipe, but the best I've found.

9. Meat pie with ground beef, diced potato, diced rutabaga, sliced celery, chopped onion, S&P, all inside a top and bottom flaky crust, and served with ketchup or beef gravy. I'd have included pasties in this list, but don't really consider them a pie.

I could go on with pumpkin, squash, cream pies, etc. But these are my favorites to make.

I like doing the mini pies because they are single serving!!

I want to try making mini lemon meringue pies when I can talk a DD into doing the stirring. LOL

I've made a lot of pies (most in the interest of just learning how to make a variety of pie recipes), but some of the ones that stood out...

A Blueberry and cream pie with a shortbread cookie crust...

I have two family favorites. An apple pie with the top brushed twice with an egg wash. I give the was before it goes into the oven, and the send wash half way through baking. The top crust comes out so shiny and pretty. Almost too pretty to cut into.

And any custard type pie. There is almost no labor for custard pies. :angel:
 
Sweet pies:
Cherry cream cheese pie
Key Lime cream cheese pie
French silk pie (chocolate) with a meringue pie crust

I love chocolate meringue pie but my meringue always weeps, just cannot get it right. I'm going to try Italian meringue next time I make it.

Savory pies:
Duchess quiches
Pot pies of any kind
I know there are other savory pies but I just can't remember right now, long day, tired.

Being a life long WI person, I never fail to crave the pasties! If you have a low carb recipe for that, I'd be so grateful.
