If you love chestnut and chocolate, you ought to try this recipe. I make this fairly often whenever chestnut is in season as canned chestnut puree is not available here. It is one of DH's favourites and I hope you will enjoy it as much as he does.

CHESTNUT CAKE

Ingredients:
60gm/2oz butter melted
500gm/16oz can sweetened chestnut puree
1/3 cup chopped walnuts
1 tsp grated lemon rind
1/2 cup milk
100gm/3oz dark chocolate, grated
1/4 cup plain flour
3 eggs, separated
1/2 cup caster sugar
Icing sugar for dusting

Method:
1. In a bowl, beat butter, chestnut puree, walnuts, rind, milk, chocolate and flour together.
2. Beat egg yolks and sugar in a separate bowl until thick and creamy. Add to chestnut mixture and mix well.
3. Beat egg whites in another bowl until firm peaks form. Gently fold into chestnut mixture.
4. Transfer mixture into a 20cm greased round pan and bake in the oven at 180 degrees C/350 degrees F for about 1 hour and 10 minutes. When cool, dust cake with icing sugar.
 
Ooh, love that Boufa! I adore chestnuts and anything chestnut flavoured, and I am always looking for chocolate chestnut recipes and this looks brilliant.

BTW, Lulu, this dessert happens to be Italian. It is called Torta de Castagne!!
