Alix's Lazy Daisy Oatmeal Cake

2 cups brown sugar
1/2 cup margarine
1 cup flour
1 tsp soda
1 cup oatmeal
2 eggs
1 tsp cinnamon
1/2 tsp allspice

Pour 1 cup boiling water over the oatmeal and the margarine. Let sit for 20 minutes. Add 2 beaten eggs. Add the sugar and the dry ingredients. 9x9 pan. Bake at 375 for 30 minutes.

Topping:
3 tbsp melted butter
2 tsp cream
5 tbsp brown sugar
1/2 cup coconut

Stir together and put on cake while hot. Put back in oven for 10 minutes.

I copied and saved in my files under "breakfast".

I'll have to use fat free Half and Half for the cream, and will prob. substitute raisins for the coconut.

What size/shape pan do you bake it in, Alix?

OOPS! I guess I should add that in there huh? A 9x9 pan. LMAO. This cake is yummy with brown sugar fudge icing too. I'll post that in here in a bit.
