Apple Dapple Cake

Apple Dapple Cake
2 cups granulated sugar
1 1/2 cups corn oil
3 eggs
3 cups unsifted flour
2 teaspoons vanilla extract
1 teaspoon baking soda
1 teaspoon salt
3 cups finely diced apples
2 cups chopped pecans
Preheat oven to 325 degrees F.
Combine sugar and oil and beat well. Add eggs, one at a time. Sift dry ingredients and stir into egg
mixture. Beat in apples, nuts and vanilla extract. Pour into a buttered springform tube pan and bake
for 1 hour or until a wooden pick inserted in the center comes out clean.
Glaze
1 cup dark brown sugar
1/4 pound butter
1/2 cup heavy cream
Combine ingredients and boil for 3 minutes. Reserving 1/3 cup, pour over the hot cake. Cool and
remove from pan. Just before serving, pour remaining Glaze over.

Now that looks like my kind of cake LT!! Do you think it would work in an ordinary angel food cake pan, since I don't have a spring form?
What kind of apples do you use?
I don't bake, but this looks so good I'm really tempted to give it a go.
 
OMG...I'm drooling. Pecans are on our no no list here, but that cake screams for a nut. Do you think hazelnuts would work? Or almonds? I don't think almonds would be the best choice but thats what I have right now.

I don't see why not........ I'm not the best baker in the kitchen, so I don't deviate from the recipe.........cooking is another story tho'......... we used Granny smith Apples.

That looks fabulous. I'm going to try it with walnuts.

I have a chocolate cake recipe that uses walnuts or pecans. I have experimented and if I want to use almonds, I only use half the quantity.
 
Makes me think of that old song for apple pan dowdy -makes your eyes light up, your tummy say howdy.

I can't use walnuts either. She is allergic to both pecans and walnuts. My other daughter is allergic to cashews. Weird huh? It limits what I can put in baking and those are my three MOST used nuts. Rotten beasts! How dare they develop those allergies!
 
Alix, I have a similar recipe that calls for coconut - and that one is really great too. Could you use coconut?

I made the Apple dapple cake and it is really delicious but very rich.

HA! Coconut is it! Thanks licia, good idea. I think it will go well with the apple too. I'll let you know how it goes. Thanks much!
