Apple Pound Cake w/ Rum Glaze

I have yet to make this but have had it many times & love it. I don't know why I haven't made it yet. Then I would get the whole thing! :LOL:

2C sugar
1 1/4C vegetable oil
3 eggs
2 1/2C self-rising flour 1tsp vanilla 1C broken pecans
1C raisins
1C flake coconut
3C chunky chopped apples

Beat sugar & oil at medium speed of mixer; add eggs one at a time, beating well after each additiong. Add vanilla & flour, beating until batter is smoothe. By hand, stir in remaining ingredients. Bake in greased bundt pan at 350F for 1 hour(or until toothpick inserted in center comes out clean). Top with glaze while warm.

Rum Glaze
1/4C sugar
1tsp. cornstarch
1/2C water
2Tbsp. butter
1/2tsp vanilla extract
1/2tsp rum extract(you could use real rum, but I don't know how much you would need...if anyone has an idea, please share it)

Combine first 4 ingredients. Bring to a boil & stir over medium heat for 5 minutes. Add extracts & spoon over warm cake.

Thanks, crewsk for sharing. It does sound delicious and when I make it I will let you know if I agree with you that I did eat the whole thing. I please don't think i'm haunting you, it's not time yet :) I just stumbled onto this recipe and it looks wonderful...just might be our thanksgiving dessert or one of them :)
