Big eggs

I have a pack of "jumbo" eggs. I want to make a cake that calls for one large egg.

Baking can be exact, so will my jumbo egg be too much I should I just throw it all in?

I would say just throw it in. If the batter is too thin maybe add a little flour, or just reduce the liquid in the recipe. I don't think it would throw off your proportions too much.

The differences in egg sizes are small. If you are concerned, whisk the egg and take or a teaspoonfull and toss it.

It will be fine. Here's an egg chart for future reference:


Two large = two jumbo, two extra large or medium, or three small

Three large = two jumbo, three extra large or medium, or four small

Four large = three jumbo, four extra large, five medium or small

Five large = four jumbo or extra large, six medium, or seven small

Six large = five jumbo or extra large, seven medium, or eight small

Don't know about you, watermelonman, but I cook by weight with an electronic scale. With that in mind, here are the weights for eggs:

Small - at least 1.5 ounces
Medium - at least 1.75 ounces
Large - at least 2 ounces
Extra-large - at least 2.25 ounces
Jumbo - at least 2.50 ounces

If you cook by weight, you can adjust your recipes accordingly.
