2 cups sugar
1/2 cup cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups water
2/3 cup oil
2 tablespoons vinegar
2 teaspoons vanilla
8 ounces cream cheese -- softened
1/3 cup sugar
1 egg
1/8 teaspoon salt
1 cup chocolate chips

Combine flour, sugar, cocoa, soda and salt in bowl. Add water, oil, vinegar and vanilla, beat until smooth (batter will be thin).

Grease and flour muffin tins or use paper baking cups. Divide batter among prepared muffin tins. Combine cream cheese, sugar, egg and salt; blend until smooth. Stir in chocolate chips. Top each cupcake with a heaping teaspoon of the cream cheese filling. Bake at 350 degrees for 30 to 35 minutes or until done.

These are great! In a pinch, you can just use box cake and put a dallop of the cream cheese, egg, sugar and c-chips in the middle.

Interesting concept making them mini-sized. I'd say use the mini-sized c-chips. If you try them, let us know how they turn out!
