Cake recipes for an 8" pan

I would like to make a small homemade cake, using either an 8" round or square cake pan. Do you have a favorite recipe you would share with me? Thanks.
 
Banana Coffee Cake With Chocolate Chip Streusel

This is good.

BANANA COFFEE CAKE WITH CHOCOLATE CHIP STREUSEL

1¼ cups semisweet chocolate chips (about 8 ounces)
2/3 cup (packed) golden brown sugar
½ cup chopped walnuts
1 tablespoon ground cinnamon
1½ cups all purpose flour
¾ teaspoon baking soda
¾ teaspoon baking powder
¼ teaspoon salt
½ cup (1 stick) unsalted butter, room temperature
¾ cup sugar
1 large egg
3 tablespoons buttermilk
1 1/3 cups mashed very ripe bananas (about 3 large bananas, very ripe with black spots on the skin)

1. Preheat oven to 350°F.

2. Butter and flour 8x8x2-inch metal baking pan.

3. Stir chocolate chips, brown sugar, walnuts, and cinnamon in small bowl until well blended; set streusel aside.

4. Sift all purpose flour, baking soda, baking powder, and salt into medium bowl.

5. Using electric mixer, beat sugar, room temperature butter, and egg in large bowl until fluffy.

6. Beat in mashed bananas and buttermilk.

7. Add dry ingredients and blend well.

8. Spread half of batter (about 2 cups) in prepared baking pan.

9. Sprinkle with half of streusel.

10. Repeat with remaining batter and streusel.

11. Bake coffee cake until tester inserted into center comes out clean, about 45 minutes.

12. Cool coffee cake in pan on rack.

Makes 12 servings.
 
Note:
The volume capacity of 8-inch square [2" deep] is the same as the volume capacity of 9-inch round [2" deep] cake pan. The volume capacity of 8-inch round [2" deep] is smaller, of course, than either.

Whipped Cream Cake
1 cup whipping cream
1 cup white sugar
2 eggs
1 1/2 cups cake flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon vanilla extract
Directions:
1 Sift and measure flour. Add salt and baking powder, and sift again.
2 Whip the cream until stiff. Drop in eggs one at a time, and beat until light and fluffy. Add sugar and vanilla, and beat again. Add sifted ingredients gradually to mixture; beat well after each addition. Pour batter into greased 9 inch round pan.
3 Bake at 350 degrees F (175 degrees C) for 35 minutes.

That's just not correct! The volume of an 8" X 8" X 2" pan is 128 cubic inches, but a 9-inch round pan that's 2 inches deep holds only 127.234395 cubic inches! Do the math!
