YUM!

Those sound so good! I'm thinking to stuff a small piece of bittersweet chocolate into the cupcake before baking, and to frost with a chocolate glaze.

so, I made 'em.
I added chocolate chips to make mocha cappucino cupcakes...
then frosted them with powdered sugar / cinnamon thinned with almond extract and milk.
YUMMY!!!

Chocolate could only make them better.
Glad you enjoyed them too!

Why does it have to be instant coffee, would regular drip coffee work?
Not that I'm looking to change the recipe. Just curious.

It is the powder you want, Pacanis, not the actual liquid coffee. But you could cut the milk down and use strong coffee if you wanted to use drip coffee.

Yeah, I knew you meant the powder, or granules. I thought about it a little and came up with, regular coffee doesn't dissolve. Not like instant anyway.
Since I don't have either instant coffee or powdered expresso, I'm going to try to find the expresso.
