Caramel Apple Coffee Cake

Caramel Apple Coffee Cake

3 eggs
2 c granulated sugar
1 ½ c vegetable oil
2 t vanilla extract
3 c flour
1 t salt
1 t baking soda
3 c chopped peeled apples
1 c chopped pecans
For the Topping:
½ c butter or margarine
¼ c milk
1 c packed brown sugar

In a mixing bowl, beat eggs until foamy; gradually add sugar. Blend in oil and vanilla extract. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans. Pour into a greased 10” tube pan; bake at 350°F for 1 hour 15 minutes or until the cake tests done. Cool in pan on a wire rack for 10 minutes. Remove cake to a serving platter. For topping, combine all ingredients in a saucepan; boil for 3 minutes, stirring constantly. Slowly pour over warm cake.

Oh thank you very much! I LOVE coffee cake, and this recipe sounds soooooo good. i can't wait to make it. I make one about every week. My family just loves them. Now I have this one to try.:)
