Chiffon cakes and the convection oven

I am starting a new job and making my chiffon cake recipe. I've only ever used a regular oven, but they have brand new convection ovens. Will the fan be an issue? Should I leave it on LOW? It only goes high or low, no fan off function.

In case anyone else runs into this.... I baked them at like 275 lo fan. They turned out great! :D
