how can i make
-cupcakes from scratch
-icings from scratch
that contain no trans fat yet still taste good

im 20 year old with not alot of baking experience and she is very self conscious about foods with trans fat in them

any recipes or help would be appreciated

Just pay close attention to the oils and fats you're baking with. If the oil, shortening or lard has "hydrogenated" in the ingredients list, it has trans fat in it. There are plenty of trans fat-free options that are very suitable alternatives to their trans fatty counterparts. Feel free to use as much butter as you want to :)

Actually, it's "Partially Hydrogenated" fats which have trans fats. Fully hydrogenated fats do not.
