Orange Coconut Frosting
This recipe will make enough frosting for a single layer sponge cake.
3 T. butter, at room temperature
1 1/2 cups sifted powdered sugar
2 tsp. grated orange peel
1 T. orange juice
1/2 cup grated coconut
1. In a large bowl, beat butter until fluffy. Add the sugar about 1/2 cup at a time, mising thoroughly with the butter. Mix in the orange rind and juice.
2. Frost the cooled cake by first spreading a thin layer of frosting on the sides and top of the cake layer. This will seal in any extra crumbs. Then spread the rest of the frosting over the entire cake. Sprinkle coconut over the top and sides of the cake.
Delicious on sponge cake or any white or yellow cake.
