Soften 2 sticks real butter, but not unitl liquified, and place in a bowl. Add 2 tsp, vanilla extract and about 4 cups superfine sugar (powdered sugar without the cornstarch blended in). Shisk together, or mix with electric mixer. Scoop a fingerful and taste. Adjust as required. If it's not stiff enough, add more sugar and blend. If it's too stiff, add more butter. When you get it just right, you can add food coloring, shredded coconut, etc.

You can also use this basic recipe for other flavors by adding fruit extracts, melted chocolate, cocoa powder, etc.

The down-side to this recipe is that it doesn't harden and so is not so great for making piped decorations. The upside is that it is truly deliscious and very spreadable. It's a treat and is as good as the cake.
