EASY lemon pudding cheesecake

Hi Everyone ! just wanted to share a delicious recipe for lemon cheesecake...

11/2 c.crushed nilla wafers(40)
3/4 c. plus 1 tb. sugar divided
3 tab. butter melted
4 -- 8oz. softened cream cheese
2 tb. flour
2 tb. milk
1 c. sour cream
4 eggs
2 pkgs.(4oz.) lemon instant pudding
1 c. thawed cool whip (opt)

Mix wafers w/ 1 tb. sugar and the butter Press firmly in a springform pan
Bake 10 mins. let cool completely.
Beat cheese ,3/4 c. sugar ,flour,milk at med. speed til smooth.
Add sour cream,mix well.
Add eggs 1 at a time
STIR in dry pudding ,spoon into wafer crust.
Bake 1 hr.5 mins.to 1 hr. 15 mins.
loosen cake from sides of pan,cool completely
refrigerate 4 hrs. or overnight
top with cool whip to serve (opt.)

I have also used different flavors of pudding, depending on my husband's mood :) hope yall enjoy !!
 
I will certainly try this one !!! I'm not used to using milk in lieu of heavy cream but the pudding idea could save me money on cream cheese, yeppers. Thank you.
