It may have just been the nature of the beast to fall--which is often the reason for having whipped cream or your chocolate sauce as a deliciously cosmetic "fix". It has no leavening except the egg whites so very little structure to hold it. Mine is just a couple of inches thick.
YES, it is decadently rich and a little does go a long way--slivers are the serving size.
