Frosting for a Dinosaur cake, help needed.

I am making my daughter a dinosaur cake for her birthday Saturday. The cake will be made from cut up pieces of angel food cake sitting on top of a sheet cake. So the pieces need to stick together, but hopefully be smooth on the outside. Also, it has to travel well. (about 10 miles) I thought I would frost the sheet cake with the Hershey's cocoa can recipe, because I've made that many times and it always works well. I haven't made a tinted frosting in a long time. I think I used to use powdered sugar, crisco and milk. I know it didn't have eggs in it or require cooking. I have Wilton icing colors. I've searched the old posts and only succeeded in confusing myself! Hope somebody can help.
 
A good cake frosting that will fill in gaps and hold the pieces together. White so I can tint. Most of the ones I've seen have had eggs and I'd prefer one without. The base sheet cake I will frost with chocolate, arrange angle food cake pieces on top and frost them with tinted.
