ISO Carrot Cake/Bread Recipe

I have some carrots that desperately need to be made into something.

Anyone have a carrot cake or bread recipe they’d be willing to share?

I’d like the texture to be dense – more bread like than cake. I prefer using the white flour I have on had, rather than having to go buy whole wheat.

Oh and I have some apples that need usin’up, too. How would I incorporate them into a recipe.

This is one we like, uses both apples and carrots:
Carrot-Apple Cake with Pecan Cream Cheese Frosting
We made it a couple of times, and both times it turned out somewhere between cake and bread in density, and moist.
There are also a couple of simpler recipes for apple carrot cake listed there.

I remember my mom making a dessert carrot strudel with cinnamon and sugar, yellow raisins and ground walnuts but I cannot find the recipe.
