I have been carrying this recipe around since my daughter (now 26) was in 4th grade cooking class. It is good because no eggs, and it is mixed and baked in the same pan. It is wonderful with just powdered sugar on top sprinkled over a lacy paper doily.

WACKY CAKE

1-1/2 cup flour
1/2 tsp salt
3 Tbs cocoa (powdered)
3/4 tsp baking soda
1 cup sugar

Sift dry ingredients or place all dry ingredients in a 8x8 inch baking pan and blend gently with a wisk so all ingredients are blended. Make 3 wells in the dry stuff.

Fill the three wells with one of the following (1 in each well)
1 tsp white vinegar
1 tsp vanilla
5 Tbs oil (I have used applesauce and it worked)

Pour over the entire mix
1 cup water

Mix gently but thoroughly. Bake at 350 for 30 minutes or until done, test with toothpick. Cake will be very moist.
