This lemon curd is made in the microwave, far easier than making it on the stovetop.

3 whole eggs
2 egg yolks
3/4 cup white sugar
Zest of 1 lemon
Juice of 3 lemons
125g butter (chopped)
Put the eggs and the yolks into a bowl
Then add the sugar and whisk until sugar is dissolved
Add the lemon zest and the lemon juice, whisk through
The add the butter (cubed) but dont mix it in
Put the mixture in the microwave for 8 minutes in total at 50%
Cook for 2 minutes, then stir every minute for the remaining time
