Lemon Curd Microwave Recipe

This lemon curd is made in the microwave, far easier than making it on the stovetop.

It is a recipe from Masterchef Australia

3 whole eggs
2 egg yolks
3/4 cup white sugar
Zest of 1 lemon
Juice of 3 lemons
125g butter (chopped)

Put the eggs and the yolks into a bowl
Then add the sugar and whisk until sugar is dissolved
Add the lemon zest and the lemon juice, whisk through
The add the butter (cubed) but dont mix it in
Put the mixture in the microwave for 8 minutes in total at 50%
Cook for 2 minutes, then stir every minute for the remaining time

Thanks Kylie. Lemon is my daughter's favorite flavor. I have some Pepperidge Farm tarts in the freezer. They won't be there after today. I am going to make this lemon curd and bake the tarts for her.

Sounds lovely Kylie :) Does it last as long as regular homemade curd?
