Lemon Polenta cake
7oz unsalted butter
7oz caster sugar
7oz ground almonds
31/2oz fine polenta/cornmeal
3 eggs
11/2 tsp baking powder
zest of 2 lemons
Make up and bake as a standard madeira cake, cool prick the top and soak with the juice of the two lemons boiled with icing sugar and a glug of limoncello.Leave in a cool place for 24 hrs and serve with espresso
For celiacs use gluten free baking powder.

This looks similar to one of my favorite lemon cakes....I add a drop of lemon oil to both the cake batter and the glaze..
