Smile Marshmallow Cupcakes and birthday cake, tips for next time?

I recently made my first birthday cake for my friends and I found that the marshmallow flowers looked much better then they tasted.

I used the Wilton recipe for the icing and its not always the biggest hit, does anyone have a recipe for icing that is a bit lighter?

Also, any piping tips? as you can see I haven't quite figured it out perfectly yet!
