Mojito Cheesecakes

I made these mojito cheesecakes at the weekend, a delightful mix of some of my favourite things, jamaican rum, fresh mint from my garden, limes and errr, cheesecake!

This is a recipe from Delicious magazine which I adapted slightly. I make the base gluten free by using gf ginger biscuits (any flavour will do but I like the ginger ones). I tried it with cottage cheese and it was a bit of a faff, so I went back to a mix of mascarpone with cream cheese (Philadelphia).

Those look great! GQ, you should look up some recipes from the "old" Graham Kerr and the old "Galloping Gourmet" series. Talk about cooking with alcohol!
