I made these mojito cheesecakes at the weekend, a delightful mix of some of my favourite things, jamaican rum, fresh mint from my garden, limes and errr, cheesecake!
This is a recipe from Delicious magazine which I adapted slightly. I make the base gluten free by using gf ginger biscuits (any flavour will do but I like the ginger ones). I tried it with cottage cheese and it was a bit of a faff, so I went back to a mix of mascarpone with cream cheese (Philadelphia).
