Montana Sapphire unbleached white all purpose flour (Secret of Hungarian bakers)

I don't know if you can buy this 10% protein flour where you live, but most Hungarian home bakers that I know swear by it. I believe it is a winter wheat and the brand is from ConAgra.

When Nick Malgieri comes to N.E., Ohio he always takes it back to New York because he notices that cakes rise higher when it is used.
