Hi I forgot to make fruit cake in advance and was wondering if I could just "drink" (with rum etc.) it for a few days or serve it fresh (with a spirnkle?) Is it inedible fresh? Or yucky? Thanks. :)

It won't be quite the same as an aged fruitcake, but will be good. We have eaten some of ours early on because we couldn't wait. Now I divide the mixture and make 2 cakes instead of one huge one and we keep one and nibble on the other now and again.

I don't use alcohol in my fruit cakes (I just make light ones) and find that they are good to go after a day or two of being wrapped tightly in wax paper (or parchment) and tin foil. They don't keep as long, but I like fruit cake so that's no problem
